Definition #
The operator’s continuous real-time diagnostic loop through the physical plant during service. Figure 8 pattern. Anchor point: the pass and expo window — the intelligence hub where FOH and BOH can be read simultaneously. Every loop crosses back through the pass.
Loop 1 (early service): pass/expo read → exterior walk (parking lot, signage, entry) → re-enter through front door (Guest arrival experience) → dining room five-sense read (sound, smell, sight) → table talk → bathrooms.
Loop 2 (peak service): same path plus the cook’s line — the pass shows output, the line shows why.
Continuous loops for the full duration of service. Not a walkthrough — a systematic, repeated, disciplined read. Breaks only when post-shift begins. Operator runs food, assists tables, refills drinks, buses and pre-buses while running the path — working the floor, not observing it.
